We are proud to share that Manamu, our extra virgin olive oil, was part of the 2025 edition of Best New Chefs, an initiative of Food & Wine in Spanish which celebrates the best emerging talent in Mexican gastronomy. This recognition not only highlights new chefs, but also brands like Mánamu that promote more authentic, healthy, and sustainable cuisine.

A jury of experts with a taste of authenticity

During the jury presentation lunch in Food & Wine TableChefs, sommeliers, communicators, and industry entrepreneurs gathered to kick off this new edition. Among them was our co-founder, Luis Antonio González, participated as part of the jury, contributing the vision of a brand that believes in the power of natural ingredients to transform experiences.

High-level cuisine and pairing with identity

The menu, created by chefs Daniel Nates (Wine Bar by CMB) and Pedro Martín (Noise), was a celebration of local produce, technique, and creativity. Dishes served included:

  • Fermented tomato aguachile with beef machaca and citrus oil

  • Rockot on embers with sikil pak

  • Braised huitlacoche with black chilhuacle sauce

  • Goat cheese mousse as a sweet ending

The pairing was in charge of Wagner Wines and Bohemian Beer, while the Mánamu extra virgin olive oil accompanied the dishes, providing aroma, freshness and balance. Our oil has become an essential ingredient for chefs who value quality and health benefits of olive oil.
